Quick, weeknight chili

Most chili recipes require you to spend your entire day simmering and stirring. Making chili using this traditional method produces amazing results, but it can be limiting if you don’t have an entire day to spend cooking.

One of the reasons I love this chili is because it is so versatile. You can swap out ingredients easily to make it healthier or to adjust the flavors to your tastes.

Try some of these simple adjustments:

  • Use fire-roasted tomatoes to spice it up. 
  • Cut down the calories in the chili by using ground turkey, lean hamburger or even buffalo to cut down on the calories. 
  • Simply use meatless burgers for a delicious vegetarian chili. You won’t notice that the meat is missing. 
  • For an alcohol-free chili, substitute non-alcoholic beer or vegetable broth in the same volume amounts. 

Use your imagination. Variety can be the key when you are starting to eat healthy. Making adjustments in the spices and ingredients can take a dish from the everyday to a special occasion.
