Ease of Preparation: Easy
Ingredients (serves 2)
1 ripe avocado, split and seeded
1 lime, juiced and extra lime slices for garnish
2 Tablespoons crushed Corazonas Chips (flavor of choice)
2 Tablespoons salsa, heat intensity to preference
Directions
Prepare the grill for medium heat. Cut the avocado in half vertically and remove the seed, but do not remove the skin. Squeeze the lime over the avocado to drizzle the limejuice on the avocado halves. Place the crushed or finely chopped chips on a small plate. Place the avocado halves cut-side down and press into the chips to embed the chips in the avocado. Place the avocados skin-side down on the grill and cook for two minutes with the lid down. Open the grill; turn the avocado halves over so the chips and cut-side are down. Sear to create grill-marks across the cut side. Remove from heat and place on a plate with the skin-side down. Spoon 1 tablespoon of salsa into each seed pocket. Garnish with lime slices and serve as a side dish or appetizer.
